Yes, it is possible!
You can preset a default tracking category on a PER FOLDER basis inside 'Supplier Automation':
..and then click here:
Mass edit - updates coding for all existing contacts.
Default settings - updates coding for all new contacts created in future.
In addition to the tracking category, you can choose defaults for:
Export destination
Approval Status
Ledger Account
Tax code
Tax export settings
Due date
Currency
